I’ve always been careful to take care of my non-stick pans, using plastic or silicone utensils, not scrubbing them with abrasive cleaners, not running them through the dishwasher and all the long list of other things that they say you can’t do with non-stick to make them last longer. And even following those rules, I’ve used non-stick pans that don’t stay non-stick for very long.
The true test of a non-stick pan is how it performs when you cook eggs and this Swiss Diamond skillet was a perfect performer. Frittatas usually require a lot of butter swirled around the bottom of the pan before the eggs go in. This Thanksgiving Leftover Frittata required only a quarter of the butter used in a standard frittata, and it turned out splendidly with the eggs practically sliding right out of the pan.

Thanksgiving Leftover Frittata
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 4 1x

Description
Fuel up and use your holiday leftovers in this Thanksgiving Leftover Frittata. It takes only a few minutes, and your clean up will be a cinch.
Ingredients
- 1/2 cup Carrot, finely diced
- 1/4 cup Onion, finely diced
- 1/2 cup Celery, finely diced
- 1 cup cooked, shredded Turkey
- 1/2 tsp Thyme
- 2 Tbsp Butter
- 4 Eggs
- 1/2 cup Half and Half
- Salt and Pepper
Instructions
- Turn on the oven broiler.
- Melt two tablespoons of butter in the Swiss Diamond non stick skillet. Add in the vegetables and saute until fork tender. Add in the thyme and stir until fragrant.
- Stir in shredded cooked turkey and saute with vegetables until heated through.
- In a bowl, crack in four eggs and whisk together with half and half. Season with salt and pepper.
- Pour over vegetables and allow to rest in the pan over medium heat until the edges of the egg begin to set.
- Transfer the frittata to the broiler and cook until the eggs are set and slightly golden brown on top. Remove and serve immediately.
